Get beads and string--if they are young girls, they'll go ape over trying to create their own necklaces or bracelets. At Christmas, my 9 year old great niece went nuts when my mother-in-law got her a huge box of beads. You can get them at any craft store, or online.

Beaded wearable art, dreamcatchers, mosaic, decoupage, drawing, macrame/hemp, wire-wrap stones, basketweaving, scrapbooking, etc.
Any craft that stores easily and doesn't take up lots of room. I usually take a small pouch of beadwork or wire and stones.

God's Eyes are good. You need sticks/Popsicle sticks and yarn.
You could do collages with "found" stuff - like leaves, sticks, photos, etc.
Work on a scrapbook- use photos and found objects to do your pages! Write out captions, etc.
