I am an MD. I have wondered about this question myself from a scientific standpoint and I feel that the best scientific answer was put forth by author Desmond Morris in his book "The Naked Ape". It was published in the 70's but I believe many of the arguments are still valid today. Try to get a copy of it on Amazon; it is fascinating if you enjoy understanding human biology and evolution.
Basically, he says that since Chimps don't engage in pair bonds and we do, then our common ancestor likely didn't either, so pair bonding is "new" in humans. Most mammals do not pair bond, but a few do, among them wolves. He makes the case that as we evolved from chimp like critters, we did more and more hunting, and that required our males to go off and leave the females behind, sometimes for days on end. Pair bonding allowed males to succeed better by having a faithful female refuse all other males while he was gone, thus allowing him to have more offspring, etc. The female also benefitted from the arrangement by ensuring the alliance with a consistant breadwinning male to feed her and their shared offspring. Males who agreed with this strategy bound together and respected each other's wives, and beat up or killed other males trying to get their hand in the cookie jar. Thus by adopting a more carnivorous lifestyle and survival strategy, we have perhaps become more like wolves, who mate for life.

Scientifically, biologists would say that pheromones released by a possible partner and attraction to certain characteristics (hardwired into our brains)cause the release of hormones and endorphines in the body and brain, respectively. These stimulate attraction which is the first step in a love relationship. As long as the compatibility factor from personal connection never gets enough negative input to outweigh the physical attraction plus the positive compatibility factor, the relationship can continue to grow and blossom.

I prefer to think true love is a connection that souls feel and it translates into physical and intellectual attraction, but it would be impossible to prove scientifically.

Deeply rooted instinct to preserve the species, that has top priority (even over gathering food). Hence: "Love makes blind".
In order to also preserve variety ( = higher survival chance of the entire species), different people favour different partners.
This rule does not seem to apply for movie- and rock- stars ....

The instinct is there to help drive reproduction of the species. Wouldn't you freak if you found out we weren't the only animal species to feel love?
