I am going to Vegas, in late November, with my wife, for one week.
I would like to spend 2/3 days maybe driving around doing day trips outside Vegas.
I think the North & South Rims of the Grand Canyon may be just a little bit too far for day trips. Can someone suggest any other parts of the Canyon that is of interest for a day trip?

A drive along Lake Mead is very picturesque, SSR 167 - a 40 mile drive,
Red Rock Canyon about 70 miles,
Valley of Fire is about 50 miles N on I-15,
Ash Meadows Natl. Wildlife Refuge, 9 miles from Death Valley Junction,

Utah = Zion National Park, Cedar Breaks, Bryce Canyon

You said other parts of the Canyon, which doesn't make sense if it's too far. But other day trips from Vegas are: Valley of Fire State Park, Red Rock Canyon, and Hoover Dam. They're all very scenic and not too far. One trip that isn't well-known is to the Little Al'e'inn at Rachel, Nevada. It's a cafe/motel/gift shop with a UFO theme near to the infamous "Area 51", which is really a high security military base. You take the Extraterrestrial Highway (that's what the signs say!) and you can even get a map to take you to the entrance of the base. Don't get too close, though. "Use of deadly force authorized" is posted and they mean it.
