"White"= Germanic, Nordic, Scots, English, Welsh, Polish, Russian, Basque, Roman-descended peoples, Greeks.
"Middle Eastern"= Arabs, Persians, Turks, Kurds and Berbers.
"Black"= Umm... a lot. Biafra, Hutus, Tutsis, "Bushmen," etc.
"Asian"= Japanese, Chinese, Khmer, Filipinos, Cambodians, Malays, Indians, Vietnamese, etc.
Amerindians= Mayans, Incas, Guaranis, Navajos, Cherokees, etc.

It's worth noting that "Hispanics" are usually a mix of "White," "Black" and Amerindian (although some people labeled as "Hispanic" can be purely white, black or amerindian).

There are at least three types of ethnicity.

Biological.morphological based groupings
Such as *******, Mongoloid, Caucasoid and Australian Aborigine
all these terms are very last century and politically incorrect in most usages.

They are really only useful for noting certain medical or genetic conditions.

More commonly, ethnicity is broken down along geographical or linguistic lines.

Over a thousand dialects of English are spoken world wide, each associated with a particular group, and not necessarily a race. For Example, Texans and Cajuns.

Keep in mind, genetically speaking, humanity is VERY homogeneous.

There is far more genetic diversity in squirrels, cows, and dogs than there is in people.

There is more genetic diversity in 200 Congo Chimpanzees than in the entire human race.

Our differences are incredibly small.

it is alright to ask these questions, as we should not be slaves to political correctness. But racism and bigotry have no place in our society.

Europeans (and each country in Europe), Africans (and each country in Africa), Asians (and each country in Asia), North Americans (US, Canada, Mexico), Central Americans, South Americans (and each country in South America), Australians (and the sections of Australia), black, white, yellow, brown, red

generically speaking: caucausian, hispanic, black, asian, other are what is typically listed on many forms where you have to declare your ethnicity. Although this just covers the very basics.
