It is all according to what version of the story you are asking about. I don't believe he ever crushed his girlfriend/fiance, however the monster does kill her on her wedding night.
In the close of the film the bride of Frankenstein - the monster and his bride is "crushed" along with Doctor Pratorius when the castle lab explodes. However, Frankenstein and his wife survives.

As far as I know, it was not Dr. Frankenstein but his monster creation who crushed his girlfriend. He did it only to make his creator feel as lonely as he felt, as he was shunned from society due to his ugly countenance. He was seeking revenge upon his creator who had created him but had abandoned him to languish in solitude and despair.
