I assume that you are speaking of such fields in Asia. It is likely that the fields are shaped as such to fit into whatever level space is available.

I have seen a few in square fields that are certainly in rows. I do know what you mean though, sometimes it seems like they are trying to make designs... but in reality I think mostly the strange shapes are simply because of the terrain.
