Figs are wonderful and very versatile. Just use them as you would apples, pears, peaches or plums. I love to make a pork roast in the crockpot with a couple figs thrown in for flavor. With this hot weather I am always happy to let the cooking be done overnight without heating the house up.
Another recipe I make in the crockpot is pear or apple butter; you can sub figs for the above fruits.
Just peel and deseed figs, toss them in crockpot with 2 cups brown sugar, 3 Tbsp cinnamon, 1/2 tsp ground cloves(optional), 1/4 tsp salt, 1 tsp double vanilla and the juice of 1/2 lemon. Let cook on Low for at least 18 hours, stirring every 6 hours or so. The amount of figs, etc will settle and turn very dark brown or almost black. Mash, taste, then add anything you feel it needs, like more sugar or cinnamon. Allspice can be used, but I'd still add more cinnamon--it's a great preservative. Also, when you check it after the first 6 hours, make sure there's enough liquid--figs tend to be a little drier than pears or apples--you can add some water or orange juice if it looks too dry. Can the results--I like it on ice cream when it's still warm:)

Eating them fresh soon after they are picked they are most delicious; I have frozen them whole by putting them in large freezer bags after cutting the stem off. When you want to use them they are good in fruit drinks made with a blender or just thawed out whole or cut up in pieces on hot cereal.

Eat them raw, they are especially nice with Parma ham wrapped around them. You can always dry them for later use.
