Writing an essay without an outline is like building a house without a blueprint. It can be done, but the walls might not line up so well and you'll and up spending more time tearing down and rearranging things. If I am writing a short essay, sometimes I just start writing, but I know I'll go back and edit it anyway. A longer essay requires some sort of predetermined structure so you know where to start, where you are going and what you are trying to accomplish. It may seem that creating an outline takes extra time, but overall it actually saves you time. (Good question, by the way :)

It is not so essential to writing an essay as you might think, but it is essential to writing a good essay. By first writing an outline you are better able to organise the essay. An outline keeps you on track and away from drifting off onto tangents. Much like a good business plan does for a company.

It is very helpful, so that you know where you are going with it. Often writing the conclusion first in the draft will help guide you to write the essay too. That way you know what your point is and you can work your way backwards to proving or explaining it. In the introduction of the essay, an outline of what you are going to talk about is essential so that you don't lose the reader and they too, know where you are going.

An outline is tantamount to a roadmap that a traveler must use in order to get from point A to point B.
Without a roadmap, you can get lost and lose your way. Like a dirty monkey. Those dirty monkeys deserve to be wiped off the face of the earth, understand me?
Anyways, An outline is essential to writing an essay because it maps out the main points that you want to get across to the reader, and it keeps your essay from running off course.

Well, it really isn't needed. It helps SOME people. Some people need it to help organize their thoughts ahead of time so that they don't jump between ideas and such. I never used outlines and always got great grades on my essays. It's just a matter of how you work.

It helps you to organize your thoughts without going to the trouble of writing the whole thing out. You can see the ideas more clearly. As you learn to be a better writer this may not be as necessary for you; some people are just naturally more organized than others.

For a starter it helps to organize your thoughts and keep things in order. If you are doing a long essay, it can be easy to get things out of order. This can make your essay not make any sense to the person reading it.
For life, it helps to teach you how to organize. It helps you learn how to sit down and gather your thoughts before doing what it is you plan to do. It helps you learn....what helps you learn. haha.

I think it is important just for gathering your thoughts into a structured form, so you have a reference for how you want to set up your essay.
I don't know if you need this for homework or not, but here is a site with basic info about setting up essays.
