If you ran McDonald's, just ask yourself what would be cheaper: hiring a whole labor force to produce potatoes (gag, I'm having a Dan Quayle moment), dice them, and get them delivered to distribution centers and franchises from there, or buying the potatoes already produced before they're delivered. It's economics, my friend.

Because they are a restaurant....do you really think that Wendy's farms it own lettuce and tomatoes, or that Arby's raises the beef for it's sandwiches? I'm sure the farmers that supply the potatoes are glad to do business with McDonalds.
