None of the above.
Ramon Hernandez is the best offensive catcher in the MLB (15 HRs, 62 RBIs). Joe Mauer has the best batting average in the MLB (.375). Johnny Estrada (.349, 8 HRs, 49 RBIs) and Victor Martinez (.309, 11 HRs, 56 RBIs) are also top catchers. And you can't exclude Jorge Posada (11 HRs, 47 RBIs) who performs well at catcher every season.
On your list, I'd say:
1. M. Piazza (.289, 13 HRs, 42 RBIs)
2. M. Barrett (.329, 9 HRs, 34 RBIs)
3. A.J. Pierzinski (.317, 7 HRs, 30 RBIs)
4. J. Willingham (.264, 11 HRs, 45 RBIs)
5. Jav. Lopez (.273, 7 HRs, 28 RBIs)

Joe Mauer of the Twins is actually the best, but to rank those you have listed (my humble opinion)
1. Varitek 2. Pierzynski 3. Barrett 4. Willingham 5. Piazza 6. Lopez
Piazza will go down as one of the all-time greats for his career, but one has to look at THIS season and who will produce for you now.

1. Varetik - Captain of best team and catches most games except Wakefield.
2. Barrett - Great young hitter
3. Willingham - Younger and plays everyday in OF but qualifies at C
4. Pierzinski - Overrated due to big personality
5. Piazza - Getting too old
6. Lopez - Should be on waivers
