Originated when people were illiterate, and marked an X as their signature, kissing it to seal it as they would a cross. The O is a little newer, and is considered an American custom, but supposedly represents arms encircled in a hug.

In roman times, when few people could write their own name, when signing an official document, they would make an x and then kiss it to attest to its authenticity ("I hereby attest to the fact that that is my x" sort of thing). And that's how x today came to signify kiss.
The o for hug i've never been sure about.

x= hug--->say you were to hug yourself around the shoulders, you would make an X.
o= kiss--->say you were to make a kiss mark on a sheet of paper with lipstick on, its more like an oval or the letter o. That's why O- is the kiss.
