Good start. Have the Wiccan guy give the girl a Wiccan themed gift. Perhaps a Wiccan necklace charm or something, which she immediately puts on, at which point the guy starts performing an elaborate Wiccan ritual...right in the middle of the party! He gets a little carried away and runs into the girl's mother sending her crashing into the pool, along with the birthday cake.
The parents are enraged. They look to their daughter, but she is sitting there with a glaze over her eyes. She knows what she must do. She rises, looks about at her family and friends who are now in a state of chaos, then grabs the cake knife(a sharp one) off the table, and putting her Uncle Larry in a choke hold, demands his car keys, and then runs off, threatening anyone who follows her. The boyfriend, right before everyone's eyes, de-materializes into thin air. He was a doppeldanger. Meanwhile, the real Wiccan boyfriend bursts out of the gardening shed wearing only his underwear and the duct tape which binds his wrists and mouth.... End of Chapter One. Begin Chapter Two.

First, decide on your setting. 1700's England or present day New York City? It will obivously change where your characters meet and deciding on a definite setting will help your ideas flow and begin to give your story structure. And while I am certainly not the author of the story, I would suggest at not putting your characters at such extreme ends of the religous spectrum. It might be hard, especially if you are shooting for historical accuracy, to devise a plot in which two such people get married. Anyways, I always find the woods are a great meeting place for all characters and is my fall back setting for when I get stuck. Also, if your story is set back in time, try an old fashioned, open air market because people of all classes and religions generally mingled there.

Have you considered the possibility that an ultra conservative faction of the catholic church captures him and attempts to scourge him(for purification) and then to burn him at the stake as a warlock. She finds out about it when she secretly follows her priest (that she believes molested her brother) to the meeting. She ends up rescuing the wiccan guy when she sees what they are going to do to him.

well if you want your fairytale to be a little more present have in the late 1880s or early 1900s. if you want more past i would do it in the 1700s...and another thing you could do is see on a fairytale movie(onthebox) when it was made or in the making....good luck and if you need a place they met at make it at movies,school dance...he is working food and drinks....
