I would say it depends on what type of consulting you're involved in, because Ceres (or to the Greeks, Demeter) is the Roman goddess of grains (hence the world "cereal"), Cereus is a type of cactus and Cereos is nothing I know of in English, but it's a nice name if pronounced phoenetically (similar to "serious"). However, you have to be prepared for people to misinterpret this name and call your company "Cheerios". I offer my advice both as a language teacher and a former businessperson myself, so take it for whatever it's worth. I think it all depends on the nature of your business.

In all honesty, I'm not terribly fond of any of those....however....
1) The way "CERES" is spelled, it would be pronounced "Sehr-ess", not "Sear-ess". Not sure if that makes a difference to you.
2) Sounds too much like Cheerios.
3) Sounds too much like you're trying to piggyback on "Sirius Radio".

I'd go with Ceres, it's shorter and easier to pronounce (and catchier) and you won't have to be correcting people as often
