My friends and I play strategy games all the time. It would be hard to pick a single game that required "the most" strategy, but lots of them require a good deal of strategy (though it's harder to find one for 6 players). My personal favorite for good strategy does take 6 and it's called Power Grid. You can see a list of some very highly ranked games (though you probably haven't heard of them) at this link. Diplomacy is from 2-7 players. It is from Avalon Hill boardgames. It requires tons of strategy but little knowledge. Trivial Pursuit probably requires the most knowledge.

Darn, I got beat to it. Power Grid is also my favorite game to play for that many people. Probably not the MOST strategic, but it's about as strategic as i want to get.
But Trivial Pursuit takes alot more knowledge.

Chinese Checkers because you have to use your opponents to your advantage and the advantage can change quite quickly. The most knowledge would have to be Trivial Pursuit.

risk is fun and you get to take over the world of course it is just dice w/ a board but you do have to plan and think of who and where you want to attack
