Shy-Boy is a good name... be nice to him talk to him quietly give him treats and be the same each time you handle him .Rats are very smart and he will learn to trust you . Be patient his socialization was not done when he was a young rat so its up to you to do it.just take it slow .good luck

You should name him Whiskey, because there is a type of Whiskey sold I think in the UK called Black and White Whiskey.
And your rat is black and white. Or how about marble.
