I writing a lesson plan for a college class assignment. The lesson will involve replacing the first letter of easy words to form other words. Example: sat, bat, mat, cat.

What is this an example of?

making words?
decoding?
masking?
rhyming?
letter patterns?
chunking?

any/all /something totally different?

Making words. Here's something that can help you.

This is a form of making words. In Pat Cunningham's Four Blocks, this method is used for making words. Although, making words involves more than just replacing the first letter of a word. Making words involves having students make words using certain letters they are given. In result, the students build onto words to make one big word.

The method of making words that you have presented are often referred to as family words. For example, this would be the -at family.

This lesson will also aid in decoding, rhyming, and chunking.

making words by changing the onset and using the rime -at
and it this case it is "rime" not "rhyme"
Patricia Cunningham does a lot of work with this

I think it would be letter patterns and decoding, but I don't know for sure.

~You're in college and you don't know the answer to this??? Get out a 1st grade workbook. You'll find it there or, ask a first grader.
