You won't have to grind them very deep ; they will not come back , like other trees. If you take them down to a foot or so , you will be fine.
( Be sure to dig the base out for your wall a good 8 - 10 inches minimum , so that it has a good solid base, and wont' shift ...
Good Luck ...

First, what is this wall holding back? If it is somewhat free standing, then the foundation is determined in your area by the depth of the frostline. This is different for various areas but if you get below it there will be no freeze/thaw action on the ground under the wall. If it is to hold back earth many more considerations must be taken concerning the type of soil, etc.
More info will help.

If the wall is attached to the house it must be the same- northern area 42 in deep- and it must tie into the existing wall- drill holes and cement Rebar in connecting the two.

your question is too vague........ in order to provide a proper answer, you need to elaborate. what do you plan to make the wall of, what country/ state, is the wall supporting anything or free standing, how well do you want it built......... ect

you would probably need at least 12" to18", you are getting to nearly a metre, so it would have to be double skinned.
