If you have ever heard oil coming out of the ground, and smelled it, you would know why they call it crude.

it is considered crude because of its specific gravity. refineries break the oil down into clean usable fluids. Lower gravity crudes take more refining. Higher gravity crudes are considered sweet because they do not have to be refined as much to get usable fluids.
