Do they actually pick extras by hand, or is it random? Could you explain the process for me? My friend is in "Lady in the Water" as an extra in the pool, and he doesn't really even do anything. So, how would I become one?

check the classifieds. They constantly have ads of people looking for extras.

They pick extras by hand just like they do tomatoes. Sorry, I thought it was funny.
Best to sign with an agent. You can probably find some talent agencies in the phone book. Not sure where you are so I don't know who I should recommend to you.
You will need head shots taken by a professional photographer, and possibly some work samples/demos. Check with the agency.
