I am specifically looking for these two mini-series...
One was about this swimming coach who was in love with a woman who wasn't in to him. But a hotel maid was in love with him. The opening music to the show was "The Rainbow Connection" by Karen Carpenter.
Another mini-series starred the swimming coach from above. He played a fisherman who had an ex girlfriend who was dying in a hospital or something. I missed the ending. I remember the title had the word "Letter" in it.....

Looks like you're looking for "Koi ga shitai, Koi ga shitai, Koi ga shitai" (aka "Love Love Love" or "Where is the Love") and "Koibumi" ("Love Letters - Men We Have Loved"). Unfortunately, Japanese TV dramas aren't normally distributed in the U.S.; fortunately, there is a market for, let's just say "unofficial" DVD's of these programs (taped off of subtitled broadcasts, and transferred to DVD), and a search on eBay for both titles did yield results.
