Anywhere up around Squamish would be good. Or you could head over to Vancouver Island and camp there. Everywhere on the island is an hour away from the water.
Tofino is a MUST if you go to the Island. Wonderful camping, fabulous surf. Or you can do the West Coast Trail, which is a five day hiking trip along the coast. Or if you're into kayaking, do the Broken Islands trip -- it's a week long kayak trip. You can go with a guide or on your own.

I think that the provincial parks in the whister area are the best. Alice lake is nice. I've heard that porteau cove and shannon falls are nice and near water. Although my all time favorite spot is Christina Lake but that's more like 5 hours from van city
