In the Caribbean we say Ca-ribb-e-an because we follow the British pronunciation. (look it up in Oxford English dictionary). Some ppl pronounce it differently because of their accent. They tend to drawl it out.

I may be wrong, but it is my understanding that the original pronunciation was "Care a BE an." President John F. Kennedy pronounced it "Ca RIB e an" so people started using that pronunciation.

I've always pronounced it "cara-BEE-an" but I've never been there. (yet) I've always thought that when people say "ca-RIB-ian" it sounds funny. But I grew up in Pittsburgh, so what sounds right to my ears may not sound right to someone who was born is, say, New York for instance. (Andrew Carnegie was from Scotland, where they pronounce his name "car-NAY-gee" however people in New York use the Irish pronunciation "CAR-na-gee" and there was a store named Kaufmann's which we always pronounced the way it's spelled, it rhymes with Hoffman, but people in New York say "COWf-man" for some reason.) Chalk it up to regional dialects and colloquialisms.

Both are grammatically correct - the variations are probably regional and/or generational.
