Simply put, yes. And FYI, some companies use this technique to force someone to leave without the company having to fire that person. They rewrite your job description, taking away the parts you liked and/or lowering the salary knowing full well you won't like it. They hope you'll voluntarily quit instead of their having to terminate you.

If you don't have a contract they can change anything. They can change the terms at any time and you have the right to quit at any time.
