I was going to fly them in for an interview. On the day of the interview say said "I can't make it but I'll pay you the airfare". I haven't yet been paid the airfare. Can I sue?

You can try if you have proof that they said they would pay. Otherwise, you're responsible. Most businesses will pay travel expenses to have potential employees come in for an interview. It's an expected thing, most of the time. That's the risk you take. So if you don't have them on tape saying they'll pay, then I'd say you're SOL.

Well, you can sue, and might even win. But if the ticket was purchased the day they were supposed to fly, isn't it refundable?
