The answer to this is almost all of them. Feldspars weather to kaolinite usually, and micas weather to illite. Volcanis glass and many mafics weather to smectite. There is a lot of variations, these are just the most common byproducts. The only rock-forming mineral that definately does not weather to clays is Quartz.

clay is like tiny tiny sand with some moisture to bond it. Sand is tiny tiny igneous rocks (or other weathered rocks), but mainly granite. so... yea.
if you're asking what minerals are in an igneous rock, i'll give you that too.

All common minerals except quartz, carbonates, and sulfides weather to clays. Then there are more rare minerals like titanite, diamond, rutile etc that don't either.
