I would take Superman in this one primarily because of his invulnerability. Cap'n Planet can be weakened by more convenient methods--especially if they fought in the U.S.--pollution is like kryptonite to him. There would be an outside chance though of Captain Planet winning; if Planet has power over Earth he may be able to discover where the shards of Krypton are located...if he could get to those, I'd say the match would be in Captain's favor.

Im afraid that Captain Planet would lose very easily. With his range of weaknesses:
toxic waste
smog
acid rain
other pollutants
He wouldnt last very long. Each of these cause his powers to temporarily weaken, and he must return to the Earth to "recharge."
