I have searched several hobby shops and i can't find a model of the new Poseidon, the closest thing they have is the Queen Mary 2, but it looks nothing like it. Does anyone know if they make them?

I don't think the new model is on the market yet. What you need to do is join a ship model forum and pay attention to what they are saying about it. You can ask there. Also, go to the manufacturer sites and check them out.
Be sure to ask questions at your local supplier. You need to get to know the manager and ask to be put on a call list for when it comes out. They might know where to help you order the first release, which will become valuable to collectors over time.
edit: You might try "scale model ships". I doubt if any of the "tall ship" makers will have the luxury liner you are looking for. There was a sister ship, maybe that one is available.
