Diamonds are often pink, and the one in the movie was pink as well. As for the "panther" part, I'm pretty sure that was just a sly name to make it sound cool ;D But hey, if there's a deeper reason, someone do tell me :D

according to the movie-
because the diamond is slightly pink,
and if you hold it up to the light, you can see a cat inside, a panther.
