I don't know if this can help, but olive oil gets hot faster than regular corn or sunflower oil; also, it reaches higher temperatures. So I guess that if regular oil burns...

Boiled olive oil is deadly in war, and was often used to defend the castle during the medieval ages. Oil from the ground was rare back then, so they used fish oil or plant oil. Boiling oil is more dangerous than boiling water, because it is hotter and the oil tends to stick. Burning oil is even worse for the same reasons. That's the idea for napalm--gelled gasoline. But, in modern warfare there are easier ways to do that damage so nobody uses boiling oil anymore. But, if you need to defend your castle from the raving hordes of barbarians then get that oil nice and hot. Oh, boiling lead was often used for the same reason. Lead won't burn though so it can't splash back on you or ignite the wooden roof of your castle.
