Clear silicone is practically invisible. Also, ALL sinks are sealed that way. Call any plumber. The standard industry practice is to seal with Silicone.
You could use clear, or shoose a color that she is okay with.
If you do not use sealant, then water will leak down into the cabinets, and you will get rot and mold. Mold can be very bad, and some pepole have bad allergies to even a small amount of mold.

Tell her it will at some time rot around the sink and then it will also leak which will cause the cabinet below it to grow some really nasty mold. Ask her if she would like to replace the cabinet and all in a year or less.

just tell if that if your plumbing is going to work you need silicone. I'm sure she'll want you to lay the pipe properly.

maybe its not the silicone thats freaking her out...maybe its the plumbing fixtures. if hers are leaking she might need new pipes...bigger pipes are always better (more pressure)
