Many many things. You can look for almost anything really. It depends on what you need to know or what your problem is.

They can be used to screen for infection, lots of diseases such as diabetes, HIV, hepatitis and also cancers and leukaemias.

They can also be used in genetic testing and to check your body fluids and electrolytes, blood groups etc etc

THAT is a very big question. There are literally THOUSANDS of things that can be found through blood tests. You'd be better off going to the library - a medical library would be best - and picking up a book on lab testing.
If you have a specific question - Can they tell if...... with a blood test, ask your doctor.

There are many types of blood tests out there. A CBC shows you if you're aneamic, if you have leukemia/lymphoma, etc. while a CMP shows your chemistries ... if you have an electrolyte abnormality that might make us think about your kidneys.
