Like everyone is saying it really depends on the car and u need to get to know it. Depending on how much power u have. Around 4000 clutch drop should get a good launch. too much wheelspin = drop the rpms, opposite applies also. Ur gunna burn the clutch up fast. And as soon as the clutch is released, floor it. the ticket for this is called "exhibition of speed". I've gotten it a couple times, trust me. good luck/

You want to hit the gas before releasing the clutch. In general, the faster the engine is running (RPM-wise), the faster you can let out the clutch without stalling. In my experience (granted, not with a BMW), the clutch will usually have a point in between fully depressed and not pressed at all where the engine will usually start to catch. If you can learn where that is, you have more control over the connection between the engine and the driveshaft.
I'm going to make the rash assumption that your BMW is fairly new, and if that's correct, then you may simply need some time to become acquainted with the way this particular car drives.

Each car is different, but the basic idea, is to increase the rpm, as you let out the clutch. If you just pop the clutch, and then hit the gas, you will get the jerking motion you talked about. The trick is to rev the engine up to say, 3500 rpm, then let the clutch out fairly quickly, then floor it, but be careful not to over-rev the engine. Keep your eye partlt on the tach, and shift at the right point, grabbing second, revving the engine at around 3500 again as you let the clutch out, and so on.
Be prepared to spend a lot of money on tires, and clutches if you do this a lot. Not to mention the tickets you may get for "display of speed", or "compitition speed" from our friendly boys in blue....

Don't put the pedal to the floor, you prolly don't have a racing clutch. Try revving to 3000 or so and put the clutch to the tranny fast, but smooth. You will prolly get some wheel spin.
