Wow, a 15 mos old son! You are very limited on what you can do.
Besides the obvious, gambling, Vegas has a ton of shopping, TONS of shows and even theme parks. You can also take a trip to the Hoover Dam.
If you like going to see the high end shops (ie: Gucci, Armani, etc) most of the high end resorts have their own shopping area. You can see a $1000 wallet to a $4000 gown just by window shopping!! Vegas has a couple of outlets and they will even pick up at the strip.
If you want to catch a show, but don't want to spend a ton of money, flip through your Visitors Guide in the hotel room. They have coupons (ie: buy one get one) and there's the Coca Cola ad. In the Coca Cola building you can get 1/2 price tickets on the day of the show. You got to get there early and usually its not the big hits like Avenue Q, Phantom or Celine Dion, but you can get a show for 1/2 off nonetheless. There are some places that will allow kids, but I am not sure on 15 mos old.
You can also do the spa thing or just relax by the pool.
The city is opened all night, so you can do anything ANY TIME!
If you like eating, they have world class restaurants too! Each restaurant has 2, 3 and 4 star restaurants, and the hotter they are, you will need a reservation.
Since you have a kid, try Mr. Lucky's at the Hard Rock Cafe/Casino. You get a soup or salad, steak and grilled shrimp for $7.77.
Or, do what I do.. just hop casino to casino! Each casino is so unique inside, that you can just see each one, and that will take you all day! There's a monorail you can take, but it cost money. You can buy an all day pass or a 10 stop pass (you can share the 10 pass with a friend).
When I go to each casino, I sign up for their "Players Card". Its free and you can get deals using their card. Some will give you discounts on food and drinks, some will comp you rooms when you gamble with them. Plus, they make great free souvenirs!!

The Orleans (just off the strip) is very family friendly, with child care (but most childcare on and off the strip is ages 3 and up no diapers). Also, most hotels allow smoking throughout the casinos and you need to walk through the casinos to eat and to get to your rooms. Do not stay at Circus Circus, although they have fun activities for the kids, the rooms are dingy and very smoky.
MGM Grand and Mandalay Bay have nice pool areas. The MGM Grand also had the lion habitat that they kids enjoy and the Rainforest Cafe for dining. They are also on the tram stop.
Next door to the MGM Grand is M&M World, a four story M&M store - lots of fun.
Take him up in the Eifel Tower, go across the street and watch the water show in front of the Bellagio.
Go on a gondola ride at the canal shops by the Venetian.
Note that you can not have your child with you if you plan on gambling in the casinos - they are not allowed. I personally would wait until your son is a bit older.

I'm not sure what your planning with your 15 month old, but the Cancun Resort located on the strip is family oriented, and has a licensed 'day-care' last time I was there, you may not even need to go out ! there are a lot of activities at the location.
Located about 1 mile south of the Luxor & Mandalay Bay, still on Las Vegas Strip. They're located on the web... call immediatly for availability, cause I've already had to book my trip !

Go on a shorter trip if you have to but leave your son at home .. you will have more fun and he will too at someone else house. Vegas is not for Kids there are a few things but 95% is for those over 21. Believe me I go all the time and always see the young couple with a beaten down look pushing the stroller around, and don't even think about going near a slot or table with him in tote ... that is a big time law and hotel workers will bug you like crazy and ask you to leave the area.

I'd personally pick another destination. At 15 months old, your son is NOT going to enjoy Vegas - there's nothing for his age group. And let's face it - Vegas is "GrownUp Disneyland", it's not meant for children. Do you really want to spend your time "on the outside looking in" so to speak? Casinos don't allow children, and besides, do you want to expose him to oodles of secondhand smoke? Go somewhere like Sesame Place - my 20 month old niece LOVES it there, and it's not insulting to the adults.

I dont mean any harm. I know you both love your son. But he is very young and much of your trip will be spent taking care of him. And if you dont have any child care on your trip you probably will be limited to what you can do. All the same I hope you have a good trip Im dying to go to Vegas

First leave the son with some family members and then hit the town for an all night fun. there are many clubs and places to hang out . Breakfast I recommend Paris. They have a great breakfast buffet. One of the best I have had in my life.

Contact a travel agency that specializes in Vegas travel. There are many. They will know how to advise you, and will have deals available through their wholesalers.
I would be hesitant to take a baby to Vegas, quite honestly.

Don't take kids to Vegas. It's stupid. Vegas is for adults. Take your kid to Disneyland.
