I am looking for some under the radar websites since I already use Minor League Baseball and Baseball America's websites.

Unfortunately, the best site for Scouting Reports, is the MLB Scouting Bureau. The problem is that is not accessible for anyone outside of MLB to use.
http://www.prorank.net/ is one you might try. I would imagine BA & minor league baseball.com are the two best for the public to access.

If you're willing to pay the subscription, Baseball america is great. If not, do what I do and monitor Minor League teams websites and track various players.
Red Sox fans would like the site http://www.redsoxstats.com good analysis of sabremetrics for Red Sox prospects.

It shows many promising minor leaguers.
