It's trying to represent a client to the best of your ability, either by researching the law and finding the cases which work to the advantage of your client, or working out a solution with an opposing party. It can be delicate, especially when you're dealing with a divorce or criminal action. I know at least one lawyer who's gotten death threats from a client because he didn't like the results of his case. And notice we call it the "practice" of law--no one is ever perfect at it. It's tough if you are a real advocate, since we've got a worse reputation than used car salesmen. But as my husband keeps saying, everyone tells lawyer jokes until they need one.

It's taking legal information (theory, research) and applying it to a specific set of facts for client (other than yourself). If what you are doing affects, secures or interprets someone else's legal rights and/or obligations, then it is the practice of law.
That being said, a more important question is how your local state defines it, for purposes of unauthorized practice of law statutes. Check your local listings.
