I assume you mean one-word anagrams.

The longest of all is (not surprisingly) a pair of scientific terms --27 letters in length:
hydroxydeoxycorticosterones = hydroxydesoxycorticosterone

For non-scientific terms, the Guinness Book of Records lists the following 18-letter pair as longest
conversationalists = conservationalists

I don't know about the longest but I have always liked "CARTHORSE" and "ORCHESTRA"
