You can use any media you want or feel comfortable with. Professional illustrators tend to use watercolor and gouache a lot, and ink pens. But there's no limits in illustration. You can use mixed media too, or combine traditional art and computer. You can scan fabric and paper and bring them in Illustrator to give your illustrations more texture, or you can create a collage, scan it and retouch it in Illustrator, or you can paint a background, or use a photograph, scan it, manipulate it in Photoshop, and add further details in Illustrator.
It's totally up to you. As long as the result is cohesive and pleasing to the eye, anything will work.

I personally prefer colored pencils because of the ease with which you can use them and the way that the color looks, but oil pastels can be used to blend colors and draw light. If you want a defined picture, you can use colored pencils. If you want a softer picture, you can use oil pastels. It's really up to you. ^-^

oil takes too long to dry, pastel smears alot, so i would say use color pencils.

Colour pencils can look very wimpy if they're not used properly. Acrylic paint is a good option. Dries quick, you can paint in layers (unlike gouache), strong colours. Depends on what look you're after.

Water color with an artist's brush.
Oils are not 'flat' and problematic for book illustrations.
