The season starts as soon as there is enough good quality snow to ski on.
January is your best bet...
In early november there is a holiday week, and families go skiing with their children... (If there is enough snow of course...)
In December avoid Christmas to New Years weeks because of the massive holiday skiers.. These cause traffic jams on the roads...and even on the ski slopes!
In February there is another mid-term school holiday that actually covers 2 weeks (the dates change each year) because half the country has 1 week and the other half the 2nd. one ...And there are still traffic jams again around Grenoble and all the way up to most ski resorts!

Its about exactly the same as the united states...just because they are across the pond doesn't change their seasons...North to South changes the season....
