Why did they need Bootstrap Turner's blood to reverse the curse? Why his?

Because he was the one who didn't return the piece of gold. He had sent it to his son. He was the reason the whole curse was put on them.

Because he was one of the pirates that took the Aztec gold. He was a crew member on the Black Pearl when Jack Sparrow was the captain. After they left Jack on the deserted island, the pirates pillaged the Aztec gold. They then had a disagreement with Bootstrap Bill Turner, because he didn't agree with what they had done to Jack. So, Barbossa dumped him over the edge of the Black Pearl, but not before Bootstrap sent his piece of gold to his son Will Turner. Barbossa and the other pirates didn't realize the curse was upon them until after they had dumped Bootstrap Bill into the depths of the ocean. They needed his blood to reverse the curse. That's why Will was able to lift the curse in the end of the first film.

The Black Pearl is easily recognized by her distinctive black hull and sails. This turns out to be an advantage in more than one way. They actually needed a drop of blood from every pirate who stole or had a coin from the treasure, plus all the coins. Since the dumb pirates decided to throw Bootstrap off the side of the ship there was no way to get his blood, to add to the others, and end the curse.

Because he was the one who took one of the forbidden amulets from the treasure chest. What I don't understand is, if all the pirates on the Black Pearl are undead how did any of them have any blood they needed to reverse the curse?

They needed his because he took the piece of gold from the chest, which ended up being the last one they collected. Since he was at the bottom of the sea, they had to get another Turner related to him...namely Will.
