what does the R in the circle behind some names mean? I think they're brand name. Like, I saw one today that said Curves and then a little R in a circle behind it.

It means it is a registered trademark, as opposed the the small "TM" that you sometimes see that means an unregistered tradmark.

There is no such mark as an "RT"--that's what the circled "R" is for.

It's not compulsory to use either the circled "R" or the "TM", however it is illegal to use the circled "R" if the trademark has not been legally registered.
