Yes, you can. What you have heard concerns about is keeping the post 6" above grade. The fact you are using redwood is good for insect and and rot deterance, however to provide the most protection and life for the post try to keep the posts exposure to the ground limited. Do this by either forming around the post and having 4-6" of concrete above the ground or by using a post anchor base which is embedded in the concrete. I like qwikcrete post mix. You can literally dump it in the hole and then aid water. I still prefer to mix the water and qwikcrete, especially if the post you are setting is going to be a structural load bearing post.

Cover post with Vaseline that will be buried . Sink post into earth @12-18 " and pour 1/4-1/2 a bag of dry concrete into hole. Fill remaining space with dirt that was removed from hole . Pack tightly once leveled and plummed . Wait 24 - 36 hrs. before using post .
Water isn't needed for concrete b/c groundwater will absorb into the dry concrete allowing it to set slowly but much harder than when premixed .
Vaseline will protect the post from chemical reaction and corrosives in the concrete .

Yes you can. It's easier if you get a bag of post hole cement. Dig the hole, pour it in the hole and add water, no mixing required. It's
available where bags of concrete is sold.

I used Quikcrete to plant a telephone-type pole over 12 years ago. It's still standing. Just make sure that the hole's deep enough in comparison with the pole's length and weight.
