I HAVE LOTS OF ZUCCHINI AND WOULD LOVE SOME GOOD RECIPES TO USE UP THESE THINGS

SUPERB SQUASH BREAD
3-EGGS, 2 CUPS-SUGAR, 1 CUP VEGETABLE OIL, 2- TEASP
VANILLA, 2-CUPS GRATED SQUASH(ZUCCHINI OR YELLOW)
3-CUPS SELF-RISING FLOUR, 1-TABLE SPOON CINNAMON
BLEND EGGS TILL FLUFFY,ADD WET INGREDIENTS & MIX, SLOWLY ADD DRY INGRED. JUST TILL MOIST
POUR INTO 2 WELL GREASED LOAF PANS.
BAKE AT 325 DEGREES- 45 TO 50 MINUTES
ALSO THIS GREAT MAIN COARSE DISH
IMPOSSIBLE ZUCCHINI PIE
1-CUP CHOPPED ZUCCHINI
1 LARGE TOMATO, CHOPPED
1- MEDIUM ONION , CHOPPED
1/3 CUP GRATED PARMESAN CHEESE
1/2 CUP BISQUIK
1 CUP MILK
1/2 TSP SALT
1/8 TSP PEPPER
2 EGGS
HEAT OVEN TO 400 DEGREES, GREASE 9 INCH PIE PLATE, LAYER ZUCCHINI,TOMATO,ONION, AND CHEESE.
STIR REMAINING INGREDIENTS TIL WELL BLENDED, POUR OVER PIE.
BAKE 35-40 MINUTES
TILL KNIFE IN CENTER COMES OUT CLEAN. REMOVE FROM OVEN, LET STAND 5 MINUTES BEFORE SERVING

Grilled zucchini is my favorite. Cut the zucchini into slice and brush the slices with olive oil and a little garlic and salt. grill them that way. Also, zucchini bread is delicious!

There's a recipe i miss from zucchini...
Slice up some zucchinis in round shapes...put them in an oiled skillet...then add some cheese, preferably Monterrey Jack, but it can be any of your liking...also add some half and half...just let it simmer until the zucchini is tender...enjoy...

Believe it or not, you can substitute zucchini in most apple recipes. I made 'Zucchinni Crisp' once using my mother's apple crisp recipe and it was quite good! My kids loved it... until I opened my mouth and told them it was zucchini.

Try frying them up with an egg batter and come cracker crumbs.
I love fried Zucchini! Fried eggplant is good too!

Easiest thing to do is to sautee slices (skin on) in small amount of olive oil and chopped garlic. Just til browned. Delicious!

i like them grilled with other vegitables. Also in soup.
