From Chicago, we are going to Minnesota for a Sox/Twins game and really want to stay at the same hotel as the Sox players, I've heard "Holiday Inn" is the official hotel of Major League baseball, Ive also heard sometimes they stay @ the Westin so I was wondering if there is one hotel chain they stay at or if anyone out there from Minnesota knows where visiting teams stay that would be great!

Why don't you call the White Sox front office and ask..I doubt that it's a state secret..Hotel/team security isn't going to allow anyone to bother the team anyway...
If you're just wanting to see the guys or get an autograph, find out which gate they enter and leave the stadium...OR, go out to the park as early as they will allow you to enter, wearing "your" teams colors..Go down to the dugout and say hi...The ushers won't usually give you a hard time, so long as you behave yourself..
If you go to the gate after the game try to remember these guys are human too...If your team lost, the guys are less likely to be in a great mood..Have fun..

Different hotel in each city...I know the Cubs stay at the Pfister in Milwaukee and the Ritz in Philly
