Left side, by your foot peg there's another peg. That's the gear shifter. Down once to go into first, up half a click for neutral, up again for the rest of the gears.
Unless you have a gp shifter, then it's up for first and down for the rest.

Do you mean final drive? (like stunters) or the internal transmission gears? Final drive needs a new sprocket, usually rear as it has more effect, extra 4 or 5 teeth lowers gearing so its easier to wheelie (and your going a bit slower)
If you need to know how to ride, you need to have bike delivered to MSF (or whatever local training you have) and learn before you become a statistic

You can change the sprockets to a bigger or smaller to change the gearing.
