The egg came first, of course. Chickens (including hens) are human-engineered domesticates, selectively bred to emphasize certain traits. The ancestors of what we know as chickens were laying eggs long before chickens existed. The first "chickens" that were categorized as such all hatched from eggs.

The egg. Reptiles, amphibians, and fish came before birds, and all of them are egg-layers.
So from a biological standpoint, the egg came first. Snakes, crocs, and froggies were laying eggs before chickens even existed!

technically a hen came first because they had to evolve from reptiles during the late cretaceous, in order for them to reproduce the adapted their earlier reptilian method of reprodution through egg production.
