A Mink, released from Mink farms and subsequently invaded all of the UK. The will kill and eat anything that moves, found in and around water. Lovely animals in there own countries, in UK a nasty pest.
The other possibility is an Otter, but they are sadly much rarer.
Black says Mink, thin and long says Otter.
Look for thick straight tail, round head (no ears), sleek and running with two front feet then two back feet, a hole with a mud slide and fish remains - Otter.
Anything else 99% likely it's Mink.
Interesting you said diving into water, like Otter, rather than slipped into water like Mink.

Mink, sadly. If an otter ran anywhere near ye, no way would ye mistake that for a rat!
Also, mink have an absolutley pathalogical need to kill ducklings. They'd wade through a sea of other creatures to get at them - then turn back and wipe out the other creatures anyway.
Here, in the boglands of Eire, we're crawling with mink. I do my best against them but it's really a lost cause.
Sure sign of mink invading a water way is that there's soon no other forms of life left :-(

If it was the size of a rat, it was probably a mink. They eat ducklings.
