They don't really explode like you see on TV. They add explosives to the car to make it do that. In the gas tank there is not oxygen mixed with the fuel to make a combustion. You need a fuel, heat, and an oxidizer all three to make an explosion. Gas in the tank lacks the oxidizer.
There is something that can occur with a hot confined liquid fuel that builds up pressure called a "blevy". Stands for boiling liquid elevated vapor pressure or something like that. When the tank holding a superheated liquid fuel bursts, you get a subsequent explosion. Conditions have to be right (or wrong), though, and you'll probably never see that in a car fire. Usually that's like at a refinery fire.
