I work in a hospital O.R. and when we have interviews we bring in two employees to sit in. Then when your finished, let the employees ask a couple questions. I've found this puts someone under pressure. Then watch them answer the questions for reaction time if there nerveous so on so forth. It will be a good motiver for your old emplyees also to be a part.

1.) What does this question mean.."People who live in glass houses shouldn't throw stones.." This will tell you what is on their mind.

2.) "Home time and job time typically are an equal balance to professionals like ourselves.." But, if one had to be say 51% in priority and the other 49%..Which one would be 51%? This one will reveal their work ethic

3.) Ask the interviewee to leave the room, walk down the hall, and get a fax cover sheet from the receptionist...Listen to their response and watch their facial affect..

Ask questions that don't have a single "correct" answer.

Microsoft is great for doing this during interviews. They'll ask questions like "Why are manhole covers round" and "If Bill Gates asked you to design his bathroom, what would you do?"

There's no correct answer to either of those. There's no wrong one either. But finding out how they answer will tell you alot about the person.

Incidentally, manhole covers were designed to be round because that's the only shape that prevents the cover from falling down into the hole. But there are many other good answers like "manholes are round" or even "the people who work in manholes tend to be round" (Don't know if the person who answered that way got the job, but the answer did stick with me)
