It means literally hypnotised. Rabbits go tharn when they are caught in the headlights of an oncoming car. It's that point where fight or flight is so overwhelmed by danger, chaos or overstimulation that the rabbit just freezes. It accounts for a lot of roadkill.

So in the song by Radiohead it means you've got me mesmorised and I'm helpless.

Yeah, I always heard someone has a "deer in the headlight look". Usually when you see a deer in the road at night, it will freeze in place and just stare at your headlights because it's so scared, it doesn't know what to do. So if someone says that about a person, it just means they're caught off guard and they don't know what to say or do. They're speechless.

It comes from if you flash a light at some wild animals they turn to look and freeze for a moment. Deer and rabbits happen to be the most common. Some people use this when hunting but it's illegal. They call it spot hunting.
