A co-worker of mine has been recording phone conversations about people at work and wants to use it in court. Is this legal?

It depends on the state you are in. In California, recording a phone call without a court order or without the consent of all the participants is a crime. Other states only require the consent of one party.

I think is not legal by court, depends on the State. Is not moral either unless is a big offense or risk to the Nation, whats the purpose to record those calls and dont let them know, that is, when is used like a trick to manipulate evidence or the truth shouldnt be accepted by court.

Is an email valid in court? even if we dont know who wrote it or someone could fake a name over the internet?

She has to be one of the persons conversing with the other parties. If she is not part of the conversation then it is illegal!
